What do people think is best to set this at? I set mine to 53 because teams rarely carry less than 53 in the NFL...Any thoughts?

It's really your preference and what you're most trying to authenticate.
Yes, the NFL roster size is 53 (no more , no less), that is NOT the game day roster size.
On game day a few more can be added and then you must declare a certain number of players inactive for that game. None of which can be replicated in the game.
So if you care more about roster management and realism you would want to carry closer to 53 or 55. If you're trying to mimic a gameday roster you would need to carry less (do what you want for the QB as an emergency QB).Comment

The minimum roster size is mostly for online franchises where you could potentially have users take over a team and release an entire roster. Most probably leave it at default in single player franchises.
