Does anybody know if the draft classes
change during the season? For example I am in week 3 and there are no 1st round rated qbs does anybody know if this will change during the season and will any new players be added

It has happened for me, a MLB played very well and changed from 4th to 1st round.
I don't know if this happens just in storyline players or all of them.

The added players thing I don't think new players are added after the class is created though, at least i did not notice any new players.
