I'm pretty sure all Special Teams positions are linked to different spots on the depth chart. Last year I mapped out what the Kickoff & Kickoff return teams looked like... Basically all 2nd string LBs are on the kickoff teams, 2nd string safeties, 5th string WR, 2nd string TE & FB were on one or both, maybe starting FB, and maybe 3rd/4th string CBs (not sure on that one).
Just have to test it out with different guys at different spots on the roster. Just make sure you don't have any redundancies on your depth chart so you can know for sure why the player you're looking at is in the lineup. For example, if your starting ROLB is also your 2nd string LOLB and you see that he's on your kickoff coverage team, you wouldn't know whether he's in there because of his spot at starting ROLB or because he is 2nd string LOLB.
The fact that this would probably take over an hour to do for all the special teams lineups just makes it all the more confusing as to why EA hasn't developed a way to change the special teams rosters.
