In my opinion, the higher winds are the only thing adding some spice to the kicking game. Try kicking in a dome... its automatic in the game and really boring.

That is a very valid point. You can adjust the kicker accuracy slider to make a little tougher as well. The wind is only a real bother when there is a headwind. I am fine with 10-15 mph cross winds, but overall I seem to see a lot more headwind than anything else.
