You have hit on a number of points that have been suggested in various forums for improvement to CFM.
Snapping: The need for a long snapping attribute so all the low OVR TE/Cs don't get cut every year. This would be made very very valuable if you implemented bad snaps on special teams and in general.
Bad snaps: The need for a "sim" switch for CFM to allow bad snaps.
Special Teams: The need for a special teams rating, the more a player plays special teams the better the rating, which could provide a boost to tackling, block shedding, returning, etc. This could also act as the attribute for determining a bad hold and would help with the advanced special teams formation subs (I wouldn't put Tom Brady at holder, or Von Miller at gunner, they do what they do well but without practising special teams they would suck at first).
Chemistry: The need for even a basic chemistry function, I would settle for just offence, defence and special teams right now. Putting a roster together is not just about signing and developing a bunch of superstars but needs chemistry in order to function as a group. The vikings defence works so well because the coach brings the players all together and there is very little change to the roster baring injuries.
