Awareness is always key...A defender, for example, could have a 91 in zone or man coverage, but the player won't seem to do much if the awareness is too low; they get lost. Awareness also appears to make up for areas that may be lacking; I would take a player with a 91 awareness and 81 zone, over a player with 91 zone and 79 awareness. (my preferences)

You should rethink your preferences because: Awareness ist much cheeper to upgrade than zone (in CFM - i don't know anything about MUT)

Mind-boggling question... How are rookies rated if they are injured prior to the combine or pro day?

They are rated based on their college career, if its a bad enough injury speed/accel and agility may take a hit.
