Question about exhibition legends/superstars teams

There are two teams that you can play around with in exhibition mode, a legends team and (i can’t remember the name of it) a team of current all stars.

Occasionally for fun I’ll play around with one of these teams versus an average NFL team. Although I’ll wind up winning, for a certain percentage of plays my offensive line generally gets manhandled. Multiple tackles in the backfield just as my RB gets the ball. And this is on a lower difficulty setting.

I understand there are sliders but I don’t understand why with the default slider set the best offensive line of all time feels average, and elite wrs get no separation against average corners in man coverage? I have the speed threshold set to zero.
