Do you guys ever play using the On The Field Volume setting?

I play this way exclusively. Doing so gives the game a very nice "sim" feel / sound to it. It gives you the impression that you are actually in the stadium.

I'll typically use:
Crowd Volume @ 100
Stadium Speakers @ 95
On Field @ 75
Commentary @ 0

Hmmm, I didn’t even know this whoosh sounds existed.

To the OP, Tess I sure do use the “on the field” sound setting. And when I play NCAA 14, I use the same settings from Madden for sound!

Is there a way to get the broadcast feel while making the crowd noise feel deafening like an actual NFL game? Would the best approach be to put crowd noise at 100, move everything else down proportionally, and then crank up my TV???

That is exactly what I do. Put everything at 65 and then crowd volume at 100

Did this in Madden 12 quite often. Definitely felt like a different experience, much like you described. Except for the fact that Davis' lines are too lengthy at times, I really think the commentary of Davis and Gaudin is outstanding. Therefore, I leave it on now. I think ESPN should have tried to hire Davis for MNF. The guy is great and he and Gaudin genuinely play well off of each other. Just my opinion on it.
