I believe it's Y/Triangle then down on the right stick. After you hit the first button the menu should appear and give you the correct approach

It's Y/Triangle -> Left Stick down to make all CBs play press.

Y/Triangle -> Right Stick down calls the "Underneath" defensive adjustment, which changes the assignments of defenders in underneath zones on the perimeter of the defense (purple / light blue zones) to Hard Flat zones.

If you change the position of a player with an X-Factor zone ability, his abilities may change. As far as I can tell there's no manual assignment of zone or superstar abilities available, they are assigned by player archetype.
