If you're planning to use the Colts for a offline or online franchise, you better do it now. When EA puts out the roster updates, Luck more than likely will be gone completely.

Whilst I'm 100% certain he will be removed from all future roster updates ( and thus not available in play now games ) upon entering CFM the incoming roster 'blends' with the CFM base roster ( the roster present on the disc/download ) thus he will be present in all future CFMs as a free agent , at least until a title update whereby I'd imagine he could be removed . This is true of all players who retire after the game is finalised

In Madden any QB with decent ratings ive had good production with them. Brissett would do well in Madden but not as well in real life.

Depends on how you want to run your offense, I suppose.

You can get by with low MAC, but the offense you run is going to be fairly pedestrian and the games would almost certainly get boring when all you can do through the air is spam slants, drags, flat routes, etc.

Low TUP isn't something I would want any part of, either. Any game against a pass rusher with abilities is going to be a horrific slog unless you gimp the AI.
