Does anyone know what this HAIR attribute is? I saw everyone has 0 except Mahomes has 100. What is this?

They haven't said anything, but Mahomes is the Head and Shoulders pitchman and EA loves cross promotions, so that's my guess.

Can the HAIR stat be edited, and is there a clear path to upgrade this clearly critical stat?

I would love for an option to modify my hair separate from my head model. Would make players have far more diversity.
