If you absolutely know it's coming (and yeah, this year, we all know it's coming), don't forget Guess Play Pass is an option too.
That's a really gamey solution, and I get that's not what you're after here, but anecdotally, it does help.
Everything else that's relevant..how hard quick slants should be to cover given how effective they are in real life, etc...you already talked about. I totally get the frustration...it's super rough to look at animations that look like the corner is completely oblivious.
I think what's happening is that the engine knows slants should be effective, and knows how hard they are to cover and how high-percentage they are, and rolls a win for the pass...but the only animations it has to represent that result are the DB just completely stoning out on the coverage.
And yeah...even knowing that, seeing it can be frustrating as hell.

Lol. Yup. Yeah, I’ve become accustomed to seeing/knowing some sort of dice roll is going on and that’s why animations happen, which is almost always frustrating.
The worst one I’m getting lately playing AM - I throw with my highly rated qb to my highly rated wr in a tight window while rolling out and possibly having some ‘pressure.’ My qb also has high throw on run. I may even get a ‘accurate bullet pass’. The specific route I’m throwing is a medium crossing route. I’m trying to throw over the lb but underneath the SS. In all-pro, this can be done. But, I swear, AM just won’t let me do it. Because it’s medium, I get the trajectory I want with a bullet over the LB. But, if my qb is ‘shaken’ from already throwing a pick, or if an x-factor pass rusher makes me pressured, and/or, because there might be 2 D players in the WR area, what happens? My qb just overthrows the wr. He throws to a spot where ONLY the DB can catch it. And, of course, he does. I just had a 6 int game. And, every one of them was like that. And, u see it. U see it and know that the GD game made some kind of calculation (AM + x-factor pressure + throw on run + 2/3 D players in 10 yard radius = int). Even though the reality is it was an easy throw, especially for a throw on the run scrambling qb. It was thrown at a time when the wr was already open and was going to continue to be open. I purposely bullet it to keep it down, actually. But, the game calculates the int, and even though I press aggressive catch, my wr just sort of looks at. Lol.
It’s such an immersion killer. U know? When u can just see/feel the game made some sort of calculation based on legit factors, but NOT based on the actual physics of the situation and not based on how u played it.
