Quick question. If I am gonna use a custom playbook on offense do I need to set it in profile which is currently set to team specific or can I set it the first time before my game as my playbook in the screen before a game and then it will save it for next time?

Which console? On next gen the AZ playbook is always the default no matter what your settings are for your team or profile.
