Is the Lambeau Leap in next gen? Anyone know how to do it?

Also, unrelated, is there a guide out there anywhere that helps you pick coverages to counter certain route combinations?

Yes, it is. When you score a touchdown, there's an option that pops up with the other choices called "crowd". Just choose that one and you get the leap

Some other teams get it too but I can't remember which ones.

As a Cowboy, I had the opportunity to choose a "jump in the stands" celebration. Funny thing was it was an away game..

I can say for sure the Broncos have it.

You can do it at away games too, but the crowd just pushes you away. Its kinda funny they would include that.
