EA usually puts them up for every update.

Click at the very bottom where it says:

"Click here for a full breakdown of all player ratings from the AFC West and NFC West."

and you should have a spreadsheet with the ratings the game came with.

Then you can check out the Launch update roster here:

It doesn't have all the players. Just the ones that were updated.
