I tried the Bills v3 sliders (for coach mode) and they seemed to perform nicely. Or just play with any other set listed in the first sticky post about all the different slider combinations (and speeds).

You can also tweak the coaching sliders depending on how you want the players to sub during the game.

I tend to "spectate" quite a bit (sometimes even letting the ps3 run while I do something else) and like the idea of rolling through a game at "fast" speed so it runs about 45-mins.
Seems to produce semi-realistic stats too (except no injuries in spectate...)!
