make running back or full back you are going out for a pass stay in to block.

Do a hot route (triangle, then RB's button) then you press L2 or R2. I'm not sure if there is a difference, but its one of those.

L2 they block 2 the left
R2 they block 2 the right

or Y button (hot route), HB/FB/TE button, and then L or R trigger (for Xbox)
