This would've been silly to ask before, but if Pasta hasn't found a way to change the difficulty level, I wonder if the quarter length can be changed?

ok yes you can change the difficulty. Just have to do it in your settings on the main menu before going into/loading your superstar mode. Im guessing those settings could probably be saved to your profile as well.
