Been trying to find out but can't find any info on this. Just wanted to know if the water accumulates over time and or the amount of rain that is going on?

I wasn't sure if I saw any videos where there were "big" puddles around the field, I did miss a few of them though.

That's to bad. Would have like to see some variable weather or big and small puddles littered around the field.

It's no gamebreaker by any means but I do think it adds a lot to the look of the game.

Water accumulates but it's mostly in the middle of the field. There are big and small puddles in various places though, but mostly centered in the field (which makes sense since that is where most of the action takes place). There is no variation in the rain. However one cool thing is that if you choose heavy rain it comes down in buckets, it looks pretty good. Also it will cause the players to slip sometimes too. And once LT after a long TD run did a baseball type slide in it and was like WHOO HOO! which I thought was cool because it seemed he was aware of the rain.
