Is there any way to QB slide, or cover ball with the QB if you aren't past the line of scrimmage? In other words, is there any way to get rid of the passing icons in order to use those controls for the QB instead of throwing?

depends on the system you play on. If it's the 360 then to enable running controls as a QB press and hold LT + RT, and then you can spin, dive, hurdle, and cover the ball.
