my quick 40 yard dash test
I've made 3 different superstars while messing around with the game. A pass catching TE, a scatback HB and a power HB. My 40 yard times seemed to be in the 5.15 - 5.35 range for all 3 guys.
Then, I just picked the mini game mode as the Browns and ran it with Cribbs (I think it was, no # on his jersey but he had the hairstyle). I ran consistant 4.35 - 4.42's. Much more acceptible.
My method of stick flicking with the first 3 guys was to hold the controller at a funky angle and flick the sticks as quick as I could. However with Cribbs, I held the controller normally (actually a bit looser than I normally would) and used my thumbs to flick as fast as I could while still keeping a rhythm. He 'entered the zone' every time I ran.
Finally, I created a speed WR and ran the 40. Same method as with Cribbs, but he wouldn't enter the zone and ran a 4.90. Regardless, he ended up with a 91 speed attribute.
So I guess my point is that you don't need to hold the controller upside down against your knee and flick with your pinky knuckles, or any other odd fashion .. your created Superstar is probably going to run slower than if you picked a real life player.
