I too am getting very good games with Custom sliders. Mine are pretty close to those he is using. Here's mine:

ACCURACY 35 / PROTECT 40 / CATCH 45
BREAK TACKLE 50 / BLOCK 55 / FUMBLE 50
REACTION 100 / INTERCEPT 20 / RUSH 100
REACTION 0 / SHED BLOCK 30 / TACKLE 30

Don't remember what the main number of those 4 areas is, but I know for sure that is what the sub level sliders are set at.
