I'm looking now for the info....confirmation that Evade will be in Madden 10.

What QB Evade is is simply the QB making some type of move/effort to escape a sack. In 2K5 and APF2K8, you'd use the Right Stick to have the QB make a quick move (he'd duck in most cases) to try and avoid the sack.
Like I said, I believe it's been confirmed for Madden this year, but I'm not readily finding where I read that.
