At the coin toss, you have the choice to kick, receive, or defer.
If you elect to receive, the opposing team will have the option to kick or return at halftime. Your opponent selects which end of the field to defend
If you elect to kick, again, the opposing will have the option at halftime. Once again, your opponent selects which end of the field.
If you defer, you are allowing your opponent to decide now, and giving yourself the option at halftime. You also are able to select which end of the field to defend to start the game.
Teams rarely defer because the common perception among coaches is "You don't worry about halftime because the game might be over by then". When they DO defer, it's usually so they have the option of playing with the wind to start the game.
