i've noticed in atleast to cases(Adrian Peterson, Santonio Holmes) have added a good 10-15 lbs in the offseason. Since this news comes out so close to release day(they are still training,) will things like this be addressed in the original roster or when the updates come out. And if so will they affect ratings at all?

Doubt it. And no it won't affect ratings. The way they play on the field affects the updated rosters not weight gain.
