I still get ball flutters now and then, when I'm a little too late getting to the QB, but not too late to get a roughing the passer penalty (which I'm getting more of now than I ever did using the hit stick). I never used to see a roughing the passer penalty before diving. And I pretty much only dive when going after the QB while he is in the pocket. IF he runs or hands the ball off to a running back, then I usually will use the hit stick, X, or L1 to try and stip the ball.

How will they pull this off without the game being a sack fest? Especially if one keeps diving at the QB

This method definitely works. I have been able to generate some sacks, whereas previously my pass rush was pretty anemic (in terms of sack totals, not pressure).

I'm pretty happy with my pass rush now.

This works so well. I just got 4 sacks in a half with Aaron Kampman (converted to LE).

Before it would get so frustrating having them throw the ball a split second before I got there every time.

Also seeing several new animations as a result of this, which is cool.

It's cheap as hell. Like it was said in this post already, most of the time it completely stops the throwing animation and you can hit it from a mile away.
