Usually best teams in online games = n00b team. Surprised to see a real NFL player not playing a more challenging team or even representing their team. Not sure whether that's sad, funny, or both.

You would be suprised. I have watched all kinds of things with real NFL players playing Madden and virtually none of them roll with their team. Some take the best teams. Some take a friends team to play with them.

They guy is a competitor and if it's all about winning why not use one of the best teams in the game?

I pick random teams with similar overalls when playing online. So if my opponent goes with a weaker team, I will as well. Occasionally, I have picked lowest rated when they pick the highest rated team to see how I fare as well.
