Their records/pictures won't be included, but one work around here is to rename retired players that come back as coaches to Cowher, Gruden, etc in the coaches off-season screen, before they disappear from rosters when you get to retires.

The retirees with the highest awareness come back as coaches - you can either sim ahead and make a list, or just edit awareness attributes up to 99 for whatever retiring players you want to come back if you're worried about skin color.

On madden 12 I've seen retired players turn out to be coaches..

I thought that Chris Collins was Chris Collinsworth when I saw it

I think the whole reason they didn't have all the coaches names this year had something to do with the lockout. If some coaches hadn't signed up or weren't signed up to be represented by the Coaches Association (Belichick) they won't be in the game. These coaches have to allow their likeness to be in the game. Another example that may lean towards this notion lies in Oakland, with Chuck Bresnahan being the Defensive Coordinator of the Raiders, but computer model Cam Bailey being in his place.
Honestly, it's the only reason I could think of as to why so many coaches weren't represented by their likenesses in this year's game, but I could be wrong.
And that Coaches list that was placed is something I've been using, no guarantee on if it's 100 percent accurate, but in the original thread for it everyone seemed pleased with it.

Madden 11 had fake coaches too, so I'm not sure it was the lockout. Probably EA just being EA, which is lazy. I have asked this question to many members of the Madden staff over at EA and they will not give me an answer.
