At the start of this season Brees will be 33, Brady will be 35 and Manning will be 36. Brees and Brady are still going strong, we're still waiting to see how manning bounces back. Do you think these guys will all be out of the league within 3 years? I don't.
Marino retired around 40, Elway at 38 (and went out as super bowl MVP, I believe), Aikman at 35 (concussions forced him into, what felt like, and early retirement. That wasn't typical "regression".), Young was around 38 (concussions), Montana around 39, Favre was 41 and Vinny Testaverde was FORTY FOUR.
I know the majority of those are, or were, great players... My point in bringing them up was to illustrate the fact that QB is not one of those positions that physically beats a guy down early to where he can't perform anymore (think RB). If you can still move around on your own two legs and throw the football, you can play.
If Weeden (or any other qb in CCM, or real life) becomes an elite, franchise quarterback and is still able to play at a high level in his mid-30's, there's no reason for him to retire. However... If he tops out as a middle-of-the road starter (low 80's) then, yeah... The Browns should probably move on (or at least draft a replacement) once he hits ~35. (19-20 season. He'll have 6 full seasons between now and then). If the Browns let him go at 35, he'll either be signed to start by someone desperate, relegated to a backup job or he'll just retire.
No one is asking for him to be rated 95 overall at 40 years old. If he turns out to be as good an NFL QB as his potential suggests, and he avoids injuries, there's no reason he shouldn't play into his late 30's.
It'd be less "sim" if the game forced out QBS at 35, regardless of their ability to play. By the time Weeden turns 32 he'll have had three full seasons to prove himself. If he's average, prepare for the future. If he's awesome, build around him knowing that you've got the QB you need to contend for the next 4-7 years.
I really don't think his age is THAT big of a deal. If you operate under the assumption that he's more NFL-ready than your average QB, you should expect him to be performing at a high level probably during his second season, IMO. If he does this, and avoids injuries, you'll have a constant QB for 8-10 years who performs at a high level for 6-8. That's pretty rare. If he goes through 2-3 seasons without making good on his potential, find a young guy to get ready. Not THAT much different from the usual 1st round QB.

The bolded group you listed was HOF's, and Brees, Brady, and Manning will be too. They're apart of a rare exception, I seriously doubt Weeden's career will have that type of longevity in the NFL. I could be wrong, but for reference...

Counting only quarterbacks who have played more than one full year (you'd be amazed at how many short-lived QBs there are), the average career length of an NFL quarterback is 6.6 years.
He may be the exception to the average and time will tell, but IMO he's not gonna be that great, quality starter perhaps I could see, but lasting staying power where teams will want him past his prime I can't envision that.
