Does anyone know if say after a couple of seasons with a single team in Connected Careers, Offline, would you be able to change teams like in Madden 12 to save being stuck with the same team.

At any point in the mode, you may change which character you control, be it a player or coach. If the character is a created player or coach (as in, specifically a player or coach you created using a character creation interface), that character will retire from the game if you switch from using him to another character.

Ostensibly then, you may change from one coach to another freely at any point in time, so no, you are not stuck with one team for the entirety of a CCM.
