Does EA photoshop their screenshots?

Almost definitely, yes. If not that, then possibly they are taken from a debug unit with a lot more AA and other settings turned up to improve image quality at the expense of frame rate (who cares about frame rate for a screenshot?).

But I would be surprised if some sort of post processing isn't done - it's practically industry standard and a freebie.

They are called bullshots, and yes they do it. The game still looks great, but the textures and anti aliasing can only be so good on a 6 year old machine.
