Do the general scouting- aka find their Physical and Intangible ratings. Also look at speed, ACC, and CIT/SPC. Don't scout for the exact number, just get the grade.
For Ex:
A Projected UDFA WR who is 6'5 233 ILBs who has A grade physical talents with A graded Speed, B graded Acceleration. B grade CIT and B grade SPC is a beast. Since his Acc is a B you can anticipate that his STR, AGL, and JMP all must be high for his position.
Remember that Madden largely operates off of templates, so you could Liken this 6'5 physical beast to Andre Johnson or A. Green- that is his projection- he is a poor man's version of these players.
Also remember that Madden operates on the belief that all prospects are not created equal, and that physical talents are more important than skill talents. IE: I would take Kenny Timm (6'5 99 speed, 89 Acc, 99 Jmp, avg dev) over a Super Star Dev 6'1 89 speed player any day.

You can't scout the projected UDFA's, as they do not appear during any of the scouting stages, they only appear at the draft, so when you take one during the draft you are essentially drafting blind, you only have the production, and size grades to go on, and all their production grades are usually under 25.
