They're in the game and have been since Cowboys/AT&T Stadium first debuted in Madden.
I highly, highly doubt any punts or kicks bounce off of them. If anything, the ball probably just clips through. The football physics have improved in recent years, but not by that much.

Having played plenty of times at Cowboys Stadium in Madden, I think the giant video board is represented well in the game as well. You can't hit it with a punt though, I've tried
