Questions about schemes in CFM

I have 2 questions regarding schemes in CFM.

When you are choosing team to start CFM with , it shows you their best players , coach and what schemes they are running and i noticed one strange thing that the schemes displayed in the team choosing screen is not the ones used when you start an actual CFM , for example when you are choosing team Eagles show that they are running Vertical offensive scheme and attacking 3-4 defense , but when you start a CFM with them and go to the schemes they use west coast offense and 4-3 base defense , can anyone explain me this non sense?

Second one is more important , what the schemes actually mean and what they change ? Lets say im using the eagles , what difference will there be between using vertical offensive scheme and spread offensive scheme ?
