I am a dolphins fan and I really would like to play a CF offline with Jimmy Johnson coaching my dolphins teams?

How I could do tha ?

For information I don't play online and I don't play Ultimate team....I play only connected offline mode.

Thanks to be helpful because I am french and speaking english is hard for me.
