I just downloaded the file I have on here and went to week 2 for Raiders vs Steels and it loaded.

Are you using an older file maybe?

May be a dumb question, but I'm new to this so there may be something I'm missing. Can you simply extract the file to a usb stick. When I do that my PS2 doesn't recognize the usb. Is there a step I'm missing?

You need a modded PS2 to use the USB stick as memory card.
If you have a PS3 you can pass files back and forth from the PS2 to Ps3 to PC and then back again

These are awesome! I'm like you, I prefer the ps2 football games. Have you ever done an updated rosters for NCAA 06 on ps2? That's the best college game IMO. Great work man!
