couple questions...

I adjusted the sliders and I fast forward to just batting but I was wondering if it was true if the sliders dont affect when I fast forward or just sim in that case. But if thats the case why doesnt it?

And also what's the difference in the camera angle that says catcher and catcher (classic).

Yes it's true, and I don't know why, the engine that controls simulated games and innings is separate though, and I'd imagine it would be complicated to try to involve sliders into that equation (without making it take forever to actually sim)

Catcher is a new angle, Catcher Classic is the one that was named "Catcher" in previous years.

It is probably possible to use the same engine for both type of games (sim vs. gameplay), but my guess is the devs have chosen to use a "dumbed-down" (i.e., without doing all the physics-related stuff played out in the field) version of engine to really accelerate the games that we skip.
