I’m in the same boat this year. I’ve been constantly restarting but I always use opening day roster.

Yep. I've been checking out various rosters with updated FA signings. I think I've finally found one that I'm going to run with. I'll sim the 1st season, then pick a team - maybe 1 from each league - to start a Franchise with.
I also found a fictional roster by sluggbug (? spelling, sorry!) that I like, so I may start a fictional franchise too.

I usually get excited to play this time of year due to the weather. I update to the latest roster and just pretend it's the next season. I don't have the time to make it an opening day roster then make the switches in the next season. Plus, once the season starts for my fictional world, whatever happens is the new reality.

Ah yes a classic example of Rosteritis. This previously could've been resolved by playing Bacon's Fictional Roster, a roster that is very difficult to replicate on the newer games without y2y saves.

I usually don’t have this problem but the few times that I have, I have started a second franchise just to break it up a bit. That usually works for me.

I used to do this with MLB a lot and as a consequence never got very far in a franchise before starting over - then I'd just give it up and move onto a new game entirely. A couple of years ago, I finally internalized that sports games are RPGs (they are not simulators that should mimic real life) and I began to embrace creating my own stories.
More importantly, I also began to realize that in-season roster updates (whether created by the community or the developer) are not really ideal for franchises (although they can be used in franchise), they're really for Play Now and H2H modes. As player ratings get changed based on tiny sample sizes in real life, they can begin to cause valuation issues - which can lead to a lot more off-kilter AI logic within the mode.
Frankly, for me, it has been more fun in my franchise watching (for example) Juan Soto get traded to Texas in 2022, have a great season, and then re-sign with the Nats when he became a Free Agent a year later than it would have been just starting over with a new franchise with him in a Padres uniform.
Play the games you love, not the games you want to love.

For me, the accurate roster only matters to me when I first start a franchise. After that, watching the randomness unfold is the most fun. Seeing guys get traded or sign somewhere completely at random, I like that. So rosteritus has never been an issue for me .

"Rosteritis" for me has always been caused by "tradeitis".
I'm never wildly concerned *too much* about what transactions are going in real life (though the Soto trade was a gamechanger), but I typically find that my main issue is that I'll make too many moves, and regret it a couple of weeks later.
The good news is that the cure is easily found...house rules (mostly cherry picked over the years from some great posters on this site), and forcing myself to actually take my time before making a transaction has been extremely helpful.
Plus, the google franchise mode sheet created by @jwdixon has been an absolutely fantastic way for me to take my franchise experience to the next level. I've only been using it for a few weeks, but tracking the small details has me actually putting serious thought into the direction that I'm trying to take my team, as opposed to just making flashy moves. I just find that when I'm actually engaged with all of the aspects of my franchise, it's easier to focus on realism vs. accidentally ripping a team off. That's not to say that I'll never make a blockbuster deal, it just means that if/when I do, it has to make complete sense for both sides in-game.

Never get it, but I play one season and done. The enjoyment I get is 30 team control and keeping the major league rosters current (don’t care about the minors). So it breaks up my play time a bit making the roster moves.

I try to get through as many seasons as I can, as someone who doesn't buy the game every year (which is why I'm unaffected by Y2Y saves, but understand the frustration).
With MLB & NBA the game gets stale when the draft classes show up. The CAPs are so different than player scans that it's too noticeable. Luckily NBA 2K offers the use of Player DNA so you can make fictional draft classes that way, or even real ones with lookalike players, but that takes time.
With MLB the drafted players take a bit to reach the majors, so I can get a little further with less work.
I used to exclusively use "real" draft classes with Madden, but with issues with that popping up I was forced to adapt and haven't looked back. I've made it to 2042 so far. Players faces being covered by helmets helps.
In another thread in The Show forums, someone brought up the lack of weighted generated player attributes (in terms of names and hair/looks etc). Madden does a pretty good job of this already, but NBA2k and The show need extensive work.
I know a lot of The Show players try to play along with the season and update rosters to reflect real life. I think that's cool but it only really works if the games play out the same way in your franchise. If the Padres last year were 20 games under .500 in your save they wouldn't trade for Juan Soto?
With younger prospects getting added in with face scans (and as a fan of a team who sucks) it's fun to get to the point where those prospects are impact players.
