Such a relative question. If you give me meter pitching on an easy level with all the stuff turned on (K zone, hot zones, ball marker, etc.) I will say that I hate it. Same goes for pulse pitching on hall of fame. For me, I turn everything off, including ball marker; pitch on all-star with modified sliders; and use analog with a broadcast view. Pitching is then awesome. To answer your question best: everyone has a different preference and style and this game gives you SO many options to find what works/is most enjoyable. You may hate the game out of the box, or you may love it. The settings and sliders are your friends.
As far as pitching in RTTS--I've always been a fan of being a reliever so I could get through games quicker. You pitch more often, but you aren't out there for every pitch for 7 innings. Both are fun, but again, it's about preference. Just be conscious of how the game rates/weighs attributes at each position. Stamina is your #1 priority when training as a SP. BB/9 and HR/9 are a good place to start for a RP.
This is a great forum, so if you need help with settings or sliders or anything else, just ask.
