If I remember correctly, you press triangle while looking at the pitching attributes.

Is he already on a team in your franchise? Should just be on his pitch types page. Change the "None" into another pitch and then go to his pitch ratings and edit to your liking.

Am I misunderstanding what you mean?

Nope, your exactly right Kb. My rookie has only three pitches and when I try to find his pitch ratings, there is no none option. It's odd.
