Ok So I am upgrading my internal hard drive and will be backing up all my games to an external hard drive. If I backup The Show will I lose all my settings and profiles? Like the sots music I have imported and what not?

I'm not 100% sure. I'm not sure you can back up game saves to an external hard drive. I run an external 1 TB external drive, and have the MLB The Show 18 game installed to it. But, all the game saves, franchise saves, rosters, etc are all saved to the internal hard drive. -

You can back up game installs. Read up on backing up ps4.
