I figure we won't be able to check this until Friday since the code with the JR editions of PS5 will be digital (and of course time locked to 9pm PST tomorrow), but if someone finagles it to work and can find out:

Color options for seats in stadium creator. It's there, but I wonder if it's a few presets or if it's a color wheel. I assume presets but it'll be a nice surprise if it's a color wheel.

Also, bullpens, are they placeable or is it just in foul territory or none at all type thing? And are all dirt infields a thing?

I won't be able to get the game until Friday afternoon so hopefully someone will come across this on Thursday night

can you import rosters from mlb 2020 into the game>

you can pick whatever stadium you want pre game but Dunedin or Buffalo stadiums aren't in the game. just generic minor league stadiums

Is Matt Moore of the Phillies in the game as a CAP or does he have face scan?

Maybe they haven't released day one roster yet.

I don't see a specific option for it. In Liad rosters there is no import from 20 option. You have to remember though online is off so I can't connect to the show servers. Can't access the vault so there may be away I can't access right now.

That being said I don't see an obvious way in load roster like you could in the past.
