So I accidentally selected "beginner" at the initial prompt, and my dynamic difficulty was set to that level to begin with. I'd actually like it to start at All-star or HOF. Does anyone know how to adjust that after the initial prompt (or how to bring that prompt back up)?

I believe I seen it. I think it is in settings where you can scroll to the right to get more options.
