I think the proper way of getting out of it would be to whip your stick to the opposite direction of you being whipped. If he is whipping you to the left, you push right with the stick (for us 360 guys, it's our right stick) and then it breaks it. You could also just keep blocking the whip+knees and hope he does a knee without whip and catch it and take him down...

I got destroyed in the muay thai clinch the other day so I decided to go back into practice mode and try getting out of as much clinches as I could. If I wasn't blocking, I would hold the right stick to the right (away from opponent) and just move the left stick back and forth like a spaz, that seemed to work pretty well against the CPU. I don't know how well it would work against a human player who knew what he was going though. The guy who had me in the muay thai clinch for half the round didn't throw the non-whip knees, but I couldn't break out of the clinch and I paid dearly for it.

Let me rephrase, it is the grapple not the clinch.

If you're fighting a wrestler, it's best to avoid clinching at all costs. If you do end up in the clinch, you can either try to get one arm hooked under before he goes for the slam or you can try and guess which way he is going to slam you. The key is pushing the opposite direction of where he's slamming you. For example, if you think he will pick you up and drop you, you hold back. If you think he'll slam you forward, you hold forward. Same goes for the side slams.

I have some trouble with this too. Do you flick the R stick towards them to get an arm under or away?
Also, sometimes i just twirl the R stick everywhere while Im in the clinch and I fall on top of them into mount every once in a while.
