Simulation vs. Default

I know someone mentioned this a little while ago but now having some time with the game, what are the differences anyone is noticing between simulation vs. default. I've never been one to worry about this and currently playing on simulation HOF which is highly unrealistic with the CPU making any and everything. So what do you play on for the most realistic but challenging experience?

I play on all star and tweak the AI tremendously. I lower the comp speed, strength and quickness to 25 and leave mine the same. I play at game speed 45 or 47. I raise each sides offensive awareness to 100. And some other tweaks. I'm constantly tweaking a couple things every game, fine tuning.
