Can someone please explain how the Assign Plays works? I keep trying and although I think i'm doing it correctly, it never works.

I am on XboxOne. The Simpliest Way to do it is go into EDIT PLAYER. The 1st thing says VITALs, click on it and scroll to the Bottom you will see where you can Assign Play Types there.
