Where can you change this? And if so what length gives you accurate stats?

the 2nd option in settings in the mycareer menu, you can change it after you get to the nba.

i like to play on 8 or 9 minute quarters

i would suggest playing on 12 min quarters until you become a starter then drop it lower so you dont start averaging 50 points a game unless thats your cup of tea
