As the title says. I know we can call pnr, iso and low post. But can we set or call a selected play from the playbook in the quick menu in game. Thanks.

If you're asking if you can customize the Quick Plays menu, I don't think you can

No you can't. But if you manage your playbook correctly, you can put your primary plays on the first page, so you have to press just two buttons (LB + Icon, instead of one - d pad left) to get to the correct menu.
