spin out of contact & running the offense

first off, ive been playing against the warriors for a few games to get the feel of things and noticed a lot of the times if i am on defense and i went for a steal or made contact, curry was able to spin out of the contact. does anyone know how to pull that move off?
also, ive been watching czars videos for 10 teams 10 days where he talks a lot about the different offensive sets to run plays out of. what i am wondering about is A, how do i know which set i am running the play out of and B, is there a way i can change what set im using on the fly?

u gotta hold left trigger and do a circle with the left analog when he bumps u, gotta ? how do u do signature post moves say like Garnett shake spin jumper cant figure it out
