Is there a way to do contract extensions during the season.

I believe so. The player has to be in the final year of their contract and announce that they wish to resign. Check this by looking at "ambition" on the player card.

On the roster screen highlight the player and press X. Aside from the normal options (release, edit, trade) there would be an option for "resign"

the player has to want to resign, only happens with about 20% of my players in my chise

You can't extend players with an option for the next year I believe.
